Message From Heather: Juice Bar Renovations, Foursquare, Revised Class Schedules and more
If you’ve noticed that Vie feels more spacious as you enter our front door, that’s because it is! We’ve taken out the half wall that separated the entrance from our lounge area to create a more open space leading up to our juice bar. You’ve probably seen our new menu board, and we've just added awnings outside, along with our cafe tables.

We’re doing this to create an even more inviting environment to sit and enjoy our salads, smoothies and juices while you socialize or conduct business through our wireless internet. So please feel free to hang around after your training session or class!

Have you heard about Foursquare? This is a social media game/competition where you can check in to venues like Vie, add tips, comments, etc. and accumulate visits toward becoming the "mayor." For more information, go to http://foursquare.com. We are offering "Mayor Specials" each month, so be sure to "check-in" each time you visit!”

Regarding classes, we have updated our schedule, adding a Monday 5:30 pm Spin class and a Wednesday 7:45 pm Barre Intensity class. We have deleted the Saturday 10AM Barre class. To see our revised schedule, click here.

Please note that we will close at 4:30 on Friday, May 7 for a private party. Client Sara Arnold has chosen Vie as the venue for her graduation party as she graduates from the U of M Dental School. Congratulations, Sara!

Also, the weekend of May 21 we are holding an ACSM (American College of Sports Medicine) education workshop for our trainers, so hours will be altered. We will need to close at 11:00 on Friday, May 21, and we'll have shortened hours on Saturday, May 22 and Sunday, May 23.

We have chosen ACSM as our certification of choice for our trainers, as we devote 2010 to investing in further educating our staff. ACSM is the standard for all certifications, which is why we chose it.

I apologize for any inconvenience this may cause, but I believe we will all benefit in the long run. Thanks for understanding!

On a final note, congratulations to Mike Wilson for winning our spinning competition. Mike participated in 33 classes over a two month period, the most of anyone, to win a month of free locker and laundry service. Free Smoothie Day May 16!
Stop by Vie on Sunday, May 16 between 1:00 and 4:00 and receive a free smoothie as we kick off our juice bar for the Spring.

Salad of the Month: Asian Salad w/Orange-Toasted Sesame Dressing
We're featuring an Asian-inspired salad this month with napa cabbage, crispy pea pods, Maderin oranges, grilled chicken, sweet red peppers, grated carrots, cucumber, crushed peanuts and an orange-toasted sesame dressing. This salad is only 355 calories, and provides all the nutrients for a balanced lunch.

Of course, we still offer old favorites like our Napa Salad with fresh avocado and our Southwest Salad with roasted corn, along with our wraps. Check out our chalkboard for daily salads and wraps.

Recipe of the Month: Roasted Asparagus Salad w/Tangerine Dressing
Take advantage of Michigan asparagus season with this Asian recipe:
  • 1 pound asparagus, trimmed
  • 1 teaspoon olive oil
  • 2 large tangerines or small oranges
  • 1/3 cup fresh tangerine juice or orange juice
  • 2 teaspoons rice vinegar
  • 1 1/2 teaspoons sesame oil
  • 1 1/2 teaspoons grated tangerine peel or orange peel
  • 1 garlic clove, pressed
  • 3/4 teaspoon minced peeled fresh ginger
  • 2 tablespoons finely chopped green onion tops
  • 2 tablespoons finely chopped dry-roasted peanuts
  1. Preheat oven to 450°F. Spread asparagus in 13 x 9 x 2-inch baking pan; drizzle with oil. Roast until crisp-tender, turning occasionally, about 10 minutes. Transfer to platter and cool.
  2. Using a sharp knife, cut peel and white pith from tangerines. Cut between membranes to release segments. Arrange tangerine segments atop asparagus.
  3. Whisk tangerine juice, vinegar, sesame oil, peel, garlic and ginger in small bowl. Season dressing to taste with salt and pepper. Drizzle over asparagus. Sprinkle with green onion tops and peanuts. Serves 4.
