A Message from Heather: Vie Salads are Here!
Our
salads are taking off! We’re up to our ears in organic lettuce and
veggies every morning as we prepare our salads for the day, and we’ve
had great feedback. Each salad is not only beautiful and delicious,
but has just the right amount of calories, protein, fat and carbs
approved by our nutritionist Lara Kross.
Our
“High-Protein Salad” has mixed greens, arugula, shrimp, tuna or
chicken, chick peas and lots of fresh veggies, with Dijon vinaigrette.
Our “Anti-Oxidant Salad” has mixed greens, baby spinach, fresh
blackberries and raspberries, carrots, sprouts, goat cheese rolled in
toasted flax seed with a yogurt-poppy seed dressing. Our dressings are
made from scratch right here at Vie. We like to say our salads are
made with love!
We're
happy to take advanced orders for luncheon meetings and parties and
even offer complimentary delivery within Ann Arbor, so keep us in mind
for if you're looking for a healthy, delicious lunch for a group.
Stay tuned for information on Vie's "Healthy Start", our new weight-loss
program combining support from our nutritionist with an individualized meal plan and exercise program. More details to come next month! For
me, the inclusion of healthy, delicious food completes the Vie package
of creating a third place for our clients, after home and work. We
bring together exercise, pampering, socializing, aesthetics, internet
access, fresh juices and smoothies. The addition of salads is like the
bow on top of the package!

New Summer Schedule
The warmer weather brings exercise outdoors for many people. In response to that, we always revise our summer class schedule to include outdoor classes like Baby Vie Bar and Boot Camp, both at the Arboretum. Check out our new summer schedule here. All classes on hiatus will resume in the Fall.
Two Hour Sunday Spin Class
Do you ever feel like you need a longer Spin class? Are you ready for a challenge? Instructor
Kristi Hameedi is offering a two hour class on Sunday, June 21. The
class begins at 8:30 and is recommended for those who have been
Spinning regularly for at least six months. The first hour will focus
on speed work, while the second hour will focus on hills, with optional
recoveries.
If you want to attend the usual 9:30 one-hour spin class, feel free to come in and join the on-going class.
Two-hour spinners should bring extra water. Please sign up ahead of time a week before at the front desk.

Recipe of the Month: Fresh Salmon-Cilantro Burgers
Adapted from a recipe in Cooking Light, this is a perfect summertime meal and comes together in about 30 minutes. A spinach salad with a light Asian dressing makes it complete. 1/4 cup reduced-fat mayonnaise
1 tablespoon chopped fresh cilantro 1 tablespoon fresh lime juice 1/8 teaspoon salt 1/8 teaspoon fresh ground pepper Mix above ingredients in a small bowl, cover and chill.
1 (1 lb.) salmon fillet, skinned and cut into 1-inch pieces
1/4 cup dry breadcrumbs 2 tablespoons fresh cilantro leaves 2 tablespoons chopped green onions 1 tablespoon chopped, seeded jalapeno pepper 2 tablespoons fresh lime juice 1/2 teaspoon salt 1/4 teaspoon fresh ground pepper 4 whole wheat buns
12 slices English cucumber 4 lettuce leaves 1.
Place salmon in a food processor, pulse until coarsely chopped. Add
breadcrumbs, cilantro, green onions, jalapeno, lime juice, salt and
pepper. Pulse four times, until just blended. Divide mixture into
four equal 1/4 inch thick patties.

Heat a grill pan over medium-high heat, and coat with cooking oil.
Cook burgers two minutes on each side, turning carefully.
3.
Spread about one tablespoon mayonnaise mixture over bottom half of
bun. Top burger with three cucumber slices and lettuce.
4 servings
Calories: 341, Protein: 31.6 g., Fat: 11.5 g., Carbs: 30 g., Fiber: 2.5 g.
