A Message from Heather: Baby Oscar Joins the Vie Family!
Oscar Dupuis Hohnke was born on November 25th at 11:40 AM, arriving at 8 lbs. 2 oz.  Everything went smoothly, and we are all doing very well.   I’m fortunate to have a capable, trustworthy staff to take care of everything at Vie while I am adjusting to my new role as a mom.  Melissa will be the main person in charge of customer service during my absence, and I am confident that things will run efficiently at Vie.

Carsten and I want to say thank you to everyone for all the kind words of support during this time, and we look forward this new chapter in our lives.  See you all soon!

Vie Kicks off the Holidays in Style

Raw Juice of the Month:  Hawaiian Paradise 15% Off
At least we can pretend, right?  Close your eyes while you sip our Hawaiian Paradise smoothie, made from a blend of bananas, pineapple, low-fat frozen yogurt and skim milk, and imagine you’re on a beach in Maui.  It’s super delicious and loaded with calcium, potassium and vitamin C.  Enjoy at 15% off in December.
 
Recipe of the Month: Chocolate, Hazelnut & Ginger Biscotti
Who doesn’t want to indulge a little during the holidays?  Biscotti cookies are lower in fat than most other cookies and are great dunked in hot tea or coffee.  These keep well and look great wrapped in tinted cellophane and tied with a ribbon to give as gifts.

For the crispiest cookies, slice the dough no thicker than a half inch.

1 2/3 cups all purpose flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 t. baking soda
½ t. salt
4 large eggs
2 t. vanilla extract
1 ¼ cups top quality semisweet chocolate chips
2/3 cup hazelnuts, toasted, husked, and coarsely chopped
1/3 cup finely chopped crystallized ginger

6 oz. good quality white chocolate (such as Lindt) chopped

1.  Preheat oven to 350 degrees.  Line a large baking sheet with parchment paper.
2.  Sift first five ingredients into medium bowl.  Add 3 eggs and vanilla; beat until blended.
3.  Stir in chocolate chips, nuts and crystallized ginger.  (Dough will be firm).  
4.  Turn dough out onto floured surface.  Gather into a ball.  Divide dough in half, and roll each half into a 12 inch long log.  Flatten each log to a 2 1/2 inch width.  Whisk remaining egg in small bowl to blend.  Brush logs with some of the beaten egg.
5.  Bake logs until golden and firm to touch, about 35 minutes.  Cool on baking sheet 15 minutes.  Reduce oven temperature to 325 degrees.
6.  Transfer logs to cutting board.  Using a serrated knife, cut logs crosswise into scant ½ inch wide slices.  Place slices, cut side down on large baking sheets.  Bake until firm, about 15 minutes.  Transfer biscotti to racks and cool completely.
7.  Stir white chocolate in top of a double boiler set over barely simmering water until melted and smooth.  
8.  Place biscotti on a rack set over a baking sheet.  Using a spoon, drizzle melted white chocolate in a zigzag pattern over cookies.  Let stand until chocolate is firm.  (Store biscotti in airtight container at room temperature up to 2 weeks or freeze up to 2 month.)

Makes about 48 cookies.
